The new experiential gin bar, W. Goa’s Sylvia, is now one of the most happening places in the party-hard North Goa. It is home to some of the best gin cocktails from all over the world.
The bar has over 21 distinguished gin labels, ranging from British, German, Japanese, Himalayan and regional Indian craft. The cocktail menu at Sylvia has been carefully designed to welcome different palate styles and could include regionally sourced desi brands or the more exotic Mezcal, Vermouth, Negroni, or even the rarer Okinawa and Roku gins from Japan.
But what is perhaps unique about Sylvia is its exclusive Gibson Course, which is essentially a 5-course set menu that will break the rules of gin pairing, giving you an unexpected experience that will spark even the most discerning palates.
Curated by the in-house team, the course is available every day from 4 p.m. to 5 p.m. and promises a gin tasting experience like never before.
In addition, the place has curated a new technique “forward cocktails” using the sous vide (“under vacuum” in French) technique. Here, the alcohol is placed in a plastic bag and infused with various herbs and fruits before boiling the whole concoction to bring alive a more robust, refreshing flavour.
Designed to seat around 150 guests in total, the delightful gin and tequila bar is set on a cliffside overlooking the rock-speckled Vagator Beach and unabashedly boasts of dim lights, cheeky couches and a picturesque view of the Arabian Sea.
To add to this heady mix are the live music gigs that happen every Saturday with an exceptional lineup of talented guitarists, saxophonists and violinists.
