The Versuchs- und Lehranstalt für Brauerei (VLB), based in Berlin, Germany, is offering its technical sensory analysis knowledge. Sensory analysis is an important tool for judging a beer’s quality.
The interplay of olfactory, gustatory and visual sensory stimuli yields a plethora of technical knowledge. These sensory variables are also a crucial determinant of whether a product will succeed or fail on the market.
The foundation of an efficient sensory regimen is well-trained personnel who can notice changes and potential problems throughout the manufacturing process and product shelf life.
This course will provide an overview of sensory analysis with a detailed presentation on the fundamentals of sensory perception revolving around sensory general aspects, true-to-type approach, evaluation of different beer styles, beer style profiling, production methods and secrets of different beer styles.

Presenters
Patrícia Diniz Fischer
Patrícia graduated as with a Masters in Chemical Engineering atfrom the Technical University of Lisbon, Portugal. She joined the VLB in 2010 to lead the Project Laboratory of the Department for Brewing and Beverage Science and Applications, responsible for quality control analysis for research purposes.
She took over the leadership of the Sensory Team of the VLB, centralising all the sensory- related work and the teaching activities at the institute. A certified sensory expert for beer and beer-mix beverages, Patricia has been a beer judge in international competitions in Brazil, Germany and Spain.
Jan Biering
Jan has a Diploma in Engineering (biotechnology and brewing science from the Technical University of Berlin and has also done an apprenticeship as a brewer and maltster in Kulmbach, Germany.
Jan is currently the Head of Research Institute for Beer and Beverage Production (FIBGP) and a consultant. Apart from his involvement in education and training for different courses at the VLB, he is also a consultant to breweries worldwide, with a focus on technological issues, micro-biology, recipe development and trouble-shooting.
Jan has prior experience in running a beer-manufacturing plant, where his responsibilities included brew house work, fermentation and filtration, quality management, and production of alcohol-free beverages..
