Rakshay and Radhika Dhariwal’s Pass Code Hospitality has added another feather in the family business cap with the launch of Pass Code Spirits Company. Crafted from wild Agave Americana (often used in Mezcal), Maya Pistola Reposado is its home-grown artisanal spirit debut.
Maya Pistola Agavepura, a 100% agave spirit, is derived from wild agave growing naturally on the Indian Deccan Plateau, distilled in Chittoor (Andhra Pradesh) and aged, bottled and blended in Goa.
The agave is steamed in an autoclave, bio-fermented, double-distilled in a half copper pot still at 55% ABV. Pistola is aged for five months on average, in virgin American White Oak and ex-Bourbon casks to give the spirit a wisp of caramel, vanilla and oak as it blends with the sweet agave.
After bottling (750 ml) at 40% ABV, Pistola imparts notes of caramel, butterscotch, oak, vanilla, black pepper and cacao. It is ultra-smooth with a great mouth feel and rounded flavours.
The additive-free Pistola retails for Rs 2,695 in Goa. It will eventually be available in four variants: Smoky Agave, Añejo, Extra Añejo and a Cask-Strength Extra Añejo.
