This August, Koko brought back its much-anticipated, cocktail-forward Polar menu for a second edition, captivating imbibers in Mumbai, Bengaluru and Hyderabad with a month-long celebration of contrasts. It made its Bengaluru debut recently with an exclusive media preview.

Far from being just another seasonal menu, Polar was a finely choreographed experience, a journey that began in the snow-dusted stillness of Mount Fuji and ended in the blazing deserts of Mexico, capturing the delicate elegance of Sake alongside the bold spirit of Tequila and Mezcal.

The concept, curated by Akash Singh, Beverage Manager at Pebble Street Hospitality, was rooted in the idea that harmony often emerges from opposition. Sake’s subtle, refined structure was given centre stage, while Mexico’s agave spirits (smoky Mezcal and fiery Tequila) stepped in as bold supporting characters.

For over two months, Akash and his team experimented in Koko’s Mumbai headquarters, crafting in-house cordials and liqueurs, infusing Sake with rare teas and flowers from Japan, and fine-tuning each pour so that it engaged the eye, nose and palate in equal measure.

Polar unfolded across seven signature cocktails, each with its own personality, flavour journey and visual drama.
